Dairy Free Ice Cream Recipe With Coconut Milk
Super simple two ingredient no churn dairy free ice cream recipe!

- 2 Cans coconut cream chilled overnight in the fridge
- 1 Can sweetened condensed coconut milk
- 1 1/2 tsp vanilla optional
Place both cans of coconut cream in the fridge overnight. They need to be completely chilled so that the cream portion is solid. Using a butter knife, I cut a small notch down one side and drain out the liquid.
Open the cans of coconut cream and remove the thick portion. Place it in the bowl of a stand mixer or a large mixing bowl and whip until stiff and fluffy.
Pout in half of the sweetened condensed coconut milk and whip. Add the rest and continue whipping until it’s all combined.
Pour into a plastic airtight container and freeze overnight or at least 8 hours.
Optional Add Ins: You want to mix these into the ice cream before you freeze it. - Add in 6-8 crushed oreos and then freeze. - Add in 4 crushed graham wafers, ¼ cup chopped mini marshmallows and some finely chopped chocolate. - Add in ¾ cup chopped strawberries that have been mixed with 1 TBSP brown or white sugar. The options are endless! Oreo is definitely my favourite.
