Easy Sweet Potato Rounds

This is an easy dairy free sweet potato recipe.. It serves as a great side to chicken breast and salad.

Ingredients

  • 2 sweet potatoes peeled and sliced
  • ¼ Olive oil
  • Parsley
  • Salt
  • Pepper
  • Paprika

Instructions

  • Peel and then slice the sweet potato into ¼ inch wide rounds. Place the sweet potatoes in a bowl, drizzle with the olive oil and stir to coat. Spread the sweet potato rounds onto parchment lined cookie sheets and drizzle with the remaining olive oil from the bowl. Season evenly with the parsley, salt, pepper and paprika.
  • Bake at 400F for 25-30 minutes. Serve immediately. Makes about 3-4 servings. They are filling so you don't need as many as you would with red potatoes.

Notes

These can be prepped up to 8 hours in advance. I’ve never left them overnight so I don’t know how that turns out. I like to slice them in the morning and drizzle olive oil over them and add a little bit of parsley and paprika. Then I let them sit in the fridge until I am ready to bake them. When you are ready to bake them, place on the parchment lined cookie sheets and season when you are ready to bake them.
