Ingredients

Dry ingredients

  • 1 cup whole wheat flour
  • ¾ cup white flour
  • ½ cup ground oats I blend mine but regular oats are work too
  • ½-¾ cup lightly packed brown sugar they are mildly sweet with ½ cup sugar
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tbsp chia seeds

Liquid Ingredients

  • ½ cup plain coconut yogurt silk is a good brand
  • 1 cup coconut milk
  • 3 tbsp coconut oil melted
  • 2 eggs
  • 1 cup frozen blueberries toss with 1 tsp flour

Instructions

  • In a large bowl mix together the dry ingredients. In a separate medium sized bowl mix together the liquid ingredients. Pour liquid ingredient mixture into the dry ingredient mixture and toss stir together with a spoon. Do not over mix.

Notes

If using all white flour use only ¾ cup of coconut milk. If using all whole wheat flour use 1 ⅛ cup of coconut milk.
