It’s a creamy iced chai latte with gingerbread cold foam. And it’s dairy free because it’s made with oat milk and the gingerbread syrup is water based!

I have tested this recipe with honey and maple syrup. It turned out great with both options. So go ahead and make it refined sugar free for a more nutritious drink!

Starbucks included it in their Christmas menu. It has the comforting flavours of gingerbread and chai. I love it! Let’s delve into how we can easily make it at home.

What’s in the Iced Gingerbread Oatmilk Chai Latte from Starbucks?

The iced gingerbread chai latte contains: oatmilk, chai concentrate, gingerbread flavoured syrup, ice and pumpkin spice topping.

In order to authentically make this drink, we need to consider the main components:

  1. Chai Tea Concentrate    `
  2. Gingerbread Syrup
  3. Gingerbread Oatmilk Cold Foam

Ingredients Needed

We’ll go over the ingredients needed to make a quick chai concentrate from tea bags, a gingerbread syrup and the gingerbread oatmilk cold foam.

  • Gingerbread Syrup: You’ll need white sugar, molasses, ginger, cinnamon, nutmeg and some water. Or purchase gingerbread syrup like this one.
  •  Chai tea bags: I like to use Tazo chai tea bags or use the premade Tazo chai concentrate.
  • Oatmilk: Use a barista blend or you’ll have a hard time creating cold foam. Starbucks uses Earth’s Own Barista Oat. I like to use Califia Farms oat milk because it’s more affordable and achieves the same result.
  • Ice
  • Pumpkin Spice Topping: It’s really just pumpkin pie spice. So use that or a bit of cinnamon and nutmeg to replace it.

What is in the Starbucks Chai Concentrate?

The concentrate from Starbucks contains: “An Infusion Of(Water, Black Tea, Cardamom, Black Pepper, Ginger, Cinnamon, Cloves, Natural Flavors, Star Anise), Sugar, Honey, Ginger Juice, Natural Flavors, Vanilla, Citric Acid.”

What is in the Starbucks Gingerbread Syrup?

I checked the Starbucks site for the ingredients list for their gingerbread flavored syrup. It contains: “water, sugar, natural flavor, citric acid, sodium benzoate”

Since Starbucks doesn’t give us all the ingredients, I came up with something that tastes similar and utilizes the warm flavours of gingerbread. A key ingredient being molasses!

What is in the Starbucks Gingerbread Oatmilk Cold Foam?

The cold foam is made with oatmilk and gingerbread syrup. They are frothed together into a creamy foam and then poured on top of the drink.

What is in the Pumpkin Spice Topping

The spice topping contains cinnamon, ginger, nutmeg and cloves.

How to Make Starbucks New Iced Gingerbread Oatmilk Chai Tea Latte

Let’s prepare the gingerbread syrup, chai concentrate and the oatmilk cold foam so we can quickly mix our iced gingerbread chai latte together.

How to Make Gingerbread Syrup

  • Measure out the sugar, molasses, ginger, cinnamon, nutmeg and water into a small saucepan. Whisk to combine.
  • Stirring throughout, bring to boil over medium heat. Remove from heat and store in an airtight glass container.

How to Make Chai Tea Concentrate

  • Boil some water and steep 2 Tazo chai tea bags in ½ cup of water for 5-7 minutes. 
  • Remove tea bags and mix in 1 tablespoon of maple syrup or honey to the chai tea.

Or use ½ cup of pre-made Tazo chai tea concentrate (the concentrate will be a bit sweeter).

Make Gingerbread Oatmilk Cold Foam

  • Add a ¼ cup of oat milk and 3 tablespoons gingerbread syrup to a cup.
  • Using a frother or handheld mixer mix until thick and foamy. Or shake in a jar until foamy.
  • I have also made cold foam using just a whisk and some elbow grease.

Mix Iced Latte

Into a tall glass:

  • Add ½-¾ cup ice
  • Pour in ½ cup of chai tea
  • Add in 1/2 cup oatmilk
  • Top with prepared gingerbread cold foam 
  • Add a sprinkle of pumpkin pie spice

Can I Make an Iced Gingerbread Chai Latte Without Sugar?

Yes! My recipe is easy to make with natural sweetener. I have tested it with maple syrup or honey. And they both turned out great!

When making the gingerbread syrup add ½ cup maple syrup or honey and omit the sugar.

I haven’t tested this recipe with alternative sweeteners like Splenda or stevia. So I’m not sure how they would taste.

If you want to make it caffeine free (mostly), use decaf chai tea concentrate or decaf chai tea bags to make this recipe. 

Tips & Customizations

  • Espresso: Make this a dirty gingerbread chai latte by adding an espresso shot.
  • Milk: Use any type of milk you’d like! I have used almond milk to make it and loved that.
  • Whipped Topping: Add coconut whipped cream or whip cream if you don’t need it dairy free.
  • Make it Hot: Prepare it hot by getting rid of the ice and steaming your oatmilk and using hot chai concentrate.
  • Make it Decaf: Use decaf chai tea concentrate if you don’t want all the caffeine.
  • Sprinkles: Use colourful sprinkles to make it even more festive and fun to drink.
  • Refined Sugar Free: Use maple syrup or honey to replace the sugar in the recipe.

Ingredients

Gingerbread Syrup*

  • ½ cup water
  • ½ cup white sugar or honey or maple syrup
  • 2 TBSP molasses
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt optional

Steep Together 5-7 minutes**

  • Two tazo chai tea bags or any chai tea bag
  • ½ cup hot water
  • 1 TBSP honey or sugar

Gingerbread Cold Foam

  • 1/4 cup oatmilk cold
  • 3 TBSP gingerbread syrup

Iced Gingerbread Oat Chai

  • ½ cup prepared chai tea or chai concentrate
  • ½ cup ice
  • ½ cup oat milk
  • Gingerbread cold foam
  • Pumpkin pie spice to top

Instructions

Gingerbread Syrup*

  • Add all ingredients into a small saucepan and whisk to combine. Place over medium heat and bring to a boil. Stir throughout.
    Once it boils remove from the heat and store in an airtight container in the fridge. Let it cool for 5-10 minutes before using in the recipe.

Gingerbread Oatmilk Cold Foam***

  • Add a ¼ cup of oat milk and 3 tablespoons gingerbread syrup to a cup.
    Using a frother or handheld mixer, mix it until thick and foamy. Or shake in a jar until foamy. More instructions on how to froth in post.

Mix Iced Gingerbread Chai

  • Into a tall glass, add ½ cup ice which is about 5 ice cubes.
  • Pour in ½ cup of prepared chai tea.
  • Add in 1/2 cup oatmilk.
  • Top with prepared gingerbread cold foam
  • Add a sprinkle of pumpkin pie spice

Notes

*You can also purchase a premade gingerbread syrup.
**Instead of homemade chai tea use ½ cup of pre-made Tazo chai tea concentrate (the store bought concentrate will be a bit sweeter).
***To make the gingerbread cold foam you can use a whisk and mix until it’s fluffy.
