It’s the perfect time for some scrumptious dairy free Apple pie muffins. Trust me, these will be a hit with whoever you are serving them too. Top them with some easy dairy free glaze and you’re all set for a perfect breakfast treat or dessert.

I have been loving the fall season. I’m almost able to wear sweaters full time! I know for my Canadian friends that has already happened… Along with winter boots and jackets. Who doesn’t love dressing all cozy and drinking hot tea while eating a muffin? I sure do and I love this recipe! It’s so rich and my husband can’t even tell it’s dairy free. Read on for instructions on how to make the perfect dairy free muffins.

How to Make Apple Pie Muffins

Apple Pie Muffins consist of a muffin base, an apple filling and a streusel topping. In order to make these dairy free apple pie muffins you will make three mixtures. Muffin batter, apple filling and streusel topping.

Making the Apple Filling

For the apple filling you mix together:

  • 1 cup diced apples
  • 1 TBSP brown sugar
  • 1 tsp flour
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

Once you have mixed it up, set it aside to let the flavors blend.

How to Make the Streusel Topping

Making the dairy free streusal topping is simple and quick! If you’re not allergic to dairy or dairy intolerant, than you can use regular butter for this recipe. I use Country Crock Plant Butter for all my baking. It’s an affordable dairy free option and available in many grocery stores.

All you need to do is mix together:

  • ¾ cups flour
  • ½ cup cup brown sugar
  • ½ cup oatmeal
  • ¼ cup plant butter, melted (I use country crock plant butter)

Mix together the dry ingredients first and then add in the melted plant butter. Make sure to keep mixing and mashing it with your fork until it resembles pea/almond sized crumbs.

Making the muffin batter

For the muffin batter, you need to mix together the dry ingredients and liquid ingredients seperately. For the dry ingredients you mix together:

  • 2 cups flour
  • ½ cup brown sugar
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • 1 tsp sea salt
  • ½ tsp cinnamon

For the liquid ingredients I mix 1 tablespoon of white vinegar into my oat milk. Then I let it sit for 5 minutes to make my own buttermilk/sourmilk. And then I mix together the oatmilk and the eggs. I add the melted coconut oil while I’m stirring the liquid ingredients into the dry.

  • 1 cup sour oat or coconut milk
  • 2 Eggs
  • 3 tbsp coconut oil melted

Mixing The Muffin Batter

Pour the liquid ingredients into the dry ingredients. Then while you are stirring, pour the coconut oil in as you mix.

Putting the Muffins together

To assemble the muffins you start by spooning the muffin batter into a greased muffin tin. They will be about 3/4 full. Then spread the apple topping evenly across the batter. Top it of with the streusel mixture by adding it directly on top of the apples. They will be slightly overfull but that is how they are supposed to be.

Ingredients

Apple Filling (mix together):

  • 1 cup diced apples
  • 1 TBSP brown sugar
  • 1 tsp flour
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

Streusel Topping (mix together)

  • ¾ cups flour
  • ½ cup cup brown sugar
  • ½ cup oatmeal
  • ¼ cup plant butter or regular butter melted (I use country crock plant butter)

Dry ingredients

  • 2 cups flour
  • ½ cup brown sugar
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • 1 tsp sea salt
  • ½ tsp cinnamon

Liquid ingredients

  • 1 cup sour oat milk add 1 tbsp white vinegar to 1 cup of oat milk, mix together and let sit for 5 minutes
  • 2 Eggs
  • 3 tbsp coconut oil melted

Instructions

Instructions:

  • Preheat the ovn to 350
  • 1. Apple Topping:
  • Dice about 1 large apple into small pieces. Place the 1 cup of apple into a small bowl and add in the rest of the apple topping ingredients. Mix together and set aside.
  • 2. Streusel topping:
  • Mix together all the streusel ingredients until they form a crumby mixture. Set aside.
  • 3. Dry ingredients for Muffins:
  • In a medium sized bowl, mix together the dry ingredients.
  • 4. Liquid ingredients for muffins:
  • In a separate bowl mix together the liquid ingredients except for the coconut oil.

  • Pour the liquids to the dry ingredients and gently fold together while pouring in the melted coconut oil.
  • Putting the muffins together:
  • Spoon the muffin batter in greased or paper lined muffin tins. You will fill them about ⅔ of the way full. Sprinkle the apple filling evenly across all the muffin batter. Sprinkle the streusel topping onto each muffin. It is alright if the muffin tin is slighlty overfilled before baking. They will rise and bake to perfection this way.
  • Bake at 350 for 23 minutes or until a toothpick comes out clean.
